Amaranth flakes add a mild, nutty ‘malt-like’ flavour to salads, stuffing and baked goods. They also make a delicious breakfast cereal – simply soak for up to 3 minutes in water or milk, or serve hot by adding boiling water and covering for 5 minutes. Add dried fruit, nuts and seeds, and top with your favourite sweetener.
