No-Bake Chocolate Coconut Slice

A chewy coconut base topped with rich dark chocolate. This easy no-bake slice is vegan and dairy-free, made with our sweetened condensed coconut milk and vegan dark chocolate buttons.

Makes: 16 pieces   Prep: 15 minutes, plus chilling   Chill: 3–4 hours   Tin: 20 cm square

Ingredients

Coconut base

Chocolate topping

Method

  1. Line a 20 cm square tin with baking paper, leaving some overhang to lift out the slice.
  2. Stir together the condensed coconut milk, melted coconut oil and vanilla, if using. Add the desiccated coconut and mix well. Leave for 5 minutes; the mixture should be thick and hold together when pressed.
  3. Press firmly and evenly into the prepared tin using the back of a spoon. Refrigerate for 30 minutes.
  4. Gently melt the chocolate with the extra teaspoon of coconut oil in a heatproof bowl over barely simmering water, keeping the bowl clear of the water. Stir until smooth.
  5. Spread the melted chocolate over the coconut base. Refrigerate for 3–4 hours, or overnight, until firm.
  6. Lift out of the tin and leave at room temperature for about 10 minutes. Cut into 16 pieces using a warm, dry knife.

Storage & tips

  • Keep in an airtight container in the fridge for up to 5 days.
  • Use fine desiccated coconut rather than coconut thread for a base that holds together well.
  • Press the base down firmly and allow plenty of chilling time before slicing.
