Gluten Free Bread Mix
Manufactured off-site in a gluten free facility. Packed down in a facility that handles gluten. Every assurance is taken to keep this product separate from gluten but we cannot ensure this so this product is not recommended for celiac.
Enquire for a 5kg bread mix, in sealed plastic that has not been packed down, suitable for celiac.
BREADMAKER RECIPE for 1kg Loaf:
Place 730grams of Breadmix into a large bowl, Add 1tsp (5 grams). Active Dry Yeast to mix (or 1 ½ tsp normal dry yeast)
In a separate bowl whisk together: 3 x size 7 eggs, 1 tsp Cider Vinegar, 3 Tbsp Cooking Oil, 600ml (2 metric cups plus 6 Tbsp) Water
Mix the wet and dry ingredients thoroughly with a wooden spoon, then transfer into the Breadmaker. Set Breadmaker to Yeast Bread Setting with Dark Crust Setting. Should the loaf colour seem pale, brown on additional cook setting or in the oven
PAN BREAD:
Follow the standard recipe on the 730g Gluten Free Bread Mix (above) but with the following modifications:
Have ready a baking dish approximately 30 x 25cm and 5–7cm deep
Increase the yeast to 15g Instant Active Yeast
Method:
Place the bread mix and dry yeast into a mixing bowl. Mix wet ingredients together, ensuring the water is hot but not boiling, then add to the dry ingredients
Beat using a mixer for several minutes on medium speed. The mixture will be quite sticky, which is why you need to use a mixer rather than kneading it by hand
Fold the mixture into the greased dish and cover with a large bowl or deep roasting dish to prevent air crusting the dough surface. Proving should take about 2 hours in a warm environment. Bake in a preheated oven at 210°C for 25 minute
For best results, allow to cool, then slice. Freeze any bread which is not to be eaten on the same day. Simply thaw slices in the microwave as required
